Garlic Cheddar Biscuits (The BEST Cheddar Bay Biscuit Knockoff)

For many of us, Red Lobster was the special occasion family restaurant we looked forward to each year for our birthday and the random family get-together. For me, it was the Cheddar Bay Biscuits that made the meal; and that's saying a lot for a girl that despised cheese growing up. In fact, if anyone remembers the "Cheesy Mashed Potatoes" that Red Lobster used to offer as a side, I would get confused laughs from the waiters when I asked for it without the cheese. Much to my dismay, it came as is.
As an adult I've navigated away from the commercial commedity of our US chain restaurants, but still admire what have become classic flavor pairings. I took a simple drop biscuit and elevated it to compete with, if not beat (I know, I know) the original version of the beloved biscuit. So I give you my Garlic Cheddar Biscuits.

This simple drop biscuit is elevated to an incredible knockoff of the original. We pair it with everything from soups, salads, pastas and roasts.
Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder

5 tablespoons very cold butter cubed
- 1 cup milk

1 cup shredded Cheddar cheese
- 1/4 cup butter, melted
- 2 clove garlic, minced
- 1/2 tsp Salt

1 tsp Onion Powder
Biscuit Dough
Butter Bath
Directions
Preheat oven to 450 degrees F
In a large bowl, sift together flour, salt and baking powder. (A stand mixer with paddle works beautifully)
Cut in butter until mixture resembles coarse crumbs.
Add the milk and cheddar cheese; stir to combine.
Drop batter by 12 large spoonfuls onto a parchment lined baking sheet. (I use a 2” cookie dough scoop)
Bake for 15 to 18 minutes, until lightly brown and sides are starting to crack.
While biscuits are baking mix melted butter, minced garlic, and 1/2 tsp Salt.
Brush garlic butter over hot baked biscuits.
Dust lightly with Onion Powder. Enjoy!
Recipe Note
Add chives or green onions to the dough to add a new flavor component.
